DEX scaling is soft-capped at 40 DEX, so that's a pretty sweet spot, but you could go to 45 for a slight increase in cast speed for offensive spells. Balder Side Sword is a great dex weapon, it scales well and for pyro youll probably want 45 to get the fastest casting time. Requires some grinding though.
